6 Noble House Destination Restaurants to Drool Over

Dinner at The Velvet
Since Noble House’s boutique properties embrace the culture and vibe of the destination they’re in, naturally, so do their restaurant and bar scenes. We break down what makes these six, in particular, so special.

Noble House properties pride themselves on being authentic to the destination they are in, and some of the most deeply rooted traditions anywhere you travel can be felt in the food and drink. So, we’re shouting out the most interesting Noble restaurant experiences from Aggieland to Rossland.

The Velvet barThe Velvet at The Josie

This mountain dweller’s paradise is the namesake of legendary local mine developer Olaus Jeldness’s most valuable mine, The Velvet. With an industrial-chic decor vibe and floor-to-ceiling glass walls that look out to the mountains on one side and the bustling kitchen on the other, this interesting restaurant spot is hard to miss – even on a blustery winter day in B.C.

Vessel at Kona KaiVessel at Kona Kai Resort & Spa

Roy Hendrickson is a well-seasoned chef (pardon the pun) that serves up California comfort food on seasonal menus as head chef of Vessel. But it is not just the sustainably-sourced sea bass that keeps patrons satisfied, it’s the coastal decor and comfortable seating with a view too. Be sure to save some stomach real estate for their drool-worthy sweets menu, including a German Chocolate Waffle, topped off with dulce de leche and sour cream sorbet.

Campfire at StellaCampfire at The Stella Hotel

True to its name, and Central Texas ambiance, this rustic modern hotspot has outdoor seating around fire pits to enjoy your smoky food with a side of fire. Locally farmed meats cook low, slow, and smoked, with an ode to the Mexican roots that run deep in Texas. Classics like fried green tomatoes and new innovations like mezcal mussels contrast to keep your taste buds interested.

Six-Seven Restaurant at The Edgewater HotelSix-Seven Restaurant at The Edgewater Hotel

With outdoor seating abutting Puget Sound, a main dining room with a stone fireplace, and decorative trees climbing the columns to the ceiling, the ambiance at Six-Seven is something else. Perhaps the only thing more impressive – depending on how thirsty you are upon arrival – is the cocktail menu. Several flavors of house-infused gin, including passionfruit and pear, make for a refreshing fruity drink. If you favor something on the heavier side, try their Tiki Lagoon Zombie with the signature ingredient of absinthe accompanied by three types of rum, cinnamon syrup, house-made grenadine, and more.

BALEENKitchen at Sole MiamiBALEEN Kitchen at Solé Miami

Meet the third iteration of the Noble House brand restaurant, named after the Baleen whale, an ever migrating whale that travels around the globe. Many notable interior design elements make BALEEN Kitchen Miami stand out, one of which is the lighting: Paper lanterns line the ceiling in the main dining area and unique chandeliers make statements throughout. The kitchen is known for being a three-meal kitchen, priding itself on turning out premium quality fair for every meal of the day.

A Rolling Restaurant at Napa Valley Wine Train

You might assume that the atmosphere is the thing to see at this restaurant on the railway, and while it is quite a sight – you are, after all, riding aboard an antique 1915 steam engine, still decorated in the elegant opulence of the Gilded Age – it has great food, Napa wine, and gorgeous vineyard views to match. The whole experience takes you on a journey through Napa Valley, and back in time to when elegant travel was the destination.
